Pumpkin Pie Smoothie





Okay so I know all things pumpkin are synonymous with Fall and Thanksgiving in the U.S. but there's no rule against enjoying delicious pumpkin goodness year round. I'm currently in New York visiting my parents and just happened to stumble upon left over cans of pumpkin puree from Thanksgiving last year. Turning the can around I noticed that it hasn't expired yet; jackpot. Here's a quick delicious pumpkin smoothie that you can enjoy year round. You can add a scoop of your favorite protein powder and enjoy it as a meal replacement or make as is. 

INGREDIENTS

1/2 cup pumpkin (canned or freshly cooked)
1/2 frozen banana
3/4 cup almond milk
1/2 scoop vanilla protein powder
1 tsp cinnamon
1/2 tsp pumpkin pie spice
pinch of ground ginger (optional)



Another simple variation of this recipe is as follows:

1/2 banana
1/3 cup pumpkin puree
1/3 cup plain Greek yogurt
3/4 cup almond milk (or coconut milk)
A dash of pumpkin pie spice
4-5 ice cubes


Blend and enjoy
