Happy Fathers Day = Jack Daniels Baked BBQ Chicken
So I'm still in New York and decided to make a dad approved finger licking dish. This recipe isn't for the faint of heart. Just kidding. It's succulent and amazingly moist. My parents always season or marinade chicken then freeze it until it's used for cooking. This is the method that I use and I absolutely love it because the meat is already full of flavor before you cook it. Here's the recipe; hope you enjoy it as much as we do.
Ingredients
1 - 4lb/5 lb Chicken
1 teaspoon smoked paprika1/4 cup olive oil
1/2 teaspoon black pepper
Place all ingredients in a large freezer bag or a large bowl with chicken except for the Jack Daniels sauce.
Remove chicken from bag and place on a baking pan, cover with 1/2 cup barbecue sauce and place on a rack.
1 cup ketchup
1 cup cider vinegar
1 cup Jack Daniel's whiskey (the good stuff)
1 cup brown sugar
1 teaspoon minced garlic
1/2 teaspoon garlic powder
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce
Combine all ingredients in a large saucepan. Bring to a boil and
simmer about 30 minutes, or until slightly thickened.
