Low Carb Green Bean Casserole

So I've been gone for a bit but I haven't forgotten you guys. Hope that everyone has had an amazingly blessed holiday season. On Christmas day myself and my brother cooked for the family. One of the things that I made was this low carb green been casserole. If you're looking for a recipe that's tasty and low on carbs then this green bean casserole recipe is perfection.


Here's what you'll need: 

28 ounce can of green beans

1/2 of a small onion, diced

2 slices of thick bacon( or turkey bacon for my non pork eaters)

8 ounces softened cream cheese

1/2 cup chicken broth

Parmesan cheese

Fried onions (optional)


Here's what you'll need to do:

Preheat oven to 350 degrees. Spray a 2 quart casserole dish with non-stick spray.

Heat a 12 inch skillet over medium heat. Chop bacon and fry until crisp.

Remove bacon from pan and reserve the grease. 

Add onion and saute for about 5 minutes. 

Add cream cheese and chicken broth. Heat and stir this mixture until smooth.

Add green beans to pan and mix well. Pour green bean mixture into casserole dish. 

Top with Parmesan cheese and bacon. 

Add a few tablespoons of fried onions as a garnish if you like.

Bake for 25 minutes, or until brown and bubbly.

Serving Size: 8 - NET carbs 3 per serving without fried onions
