Low Carb Avocado Boats
If you're a low carber and an avocado lover then you'll love this recipe. These make a great low carb snack or meal. It would be a fun dish to make to take to a party. They are super simple but clever enough to impress your friends. Here's what you'll need:
1 lb. Lean Ground Beef
4 Grape Tomatoes
1/4 Cup of Sour Cream
1/4 Cup of Salsa
3/4 Cup Shredded Sharp Cheddar Cheese
3 Large Shredded Romaine Leaves
To season the meat I used Cumin, Chili Powder, grated Onion, grated Garlic, and Pepper. You can use any seasonings you'd like but beware of excess carbs.
Cook the ground beef with all of your seasonings over medium-high heat until the meat is cooked all the way - Drain excess grease from the pan
Cut the avocados in half and use a spoon to scoop out the avocado. If you slide a large spoon a long the edges, you should be able to get it out in one piece
In the empty avocado shells, add 1/4 of the shredded lettuce into the bottom of each shell
Next, add 1/4 of the ground beef into each shell
Top each one with cheese, salsa, sour cream, tomato, jalapeno and avocado.
Tip: Use excess avocado to make home made guacamole or if you're like me eat it as is.
