Caribbean Style Boiled Corn
Boiled corn may sound boring but I promise you that Caribbean -styled boiled corn will have you gnawing at the cob long after the kernels are eaten. Boiled and roasted corn was a staple in my island home. This recipe is extremely flavorful and a definite summer must have.
Here's what you'll need:
1 cup fresh Coconut milk
1 cup of water
Salt to taste
Freshly ground black pepper to taste
Minced hot pepper to taste
4 sprigs fresh Thyme
6 ears young Corn
Here's What You'll Do:
Add all the ingredients except the corn, to a large pot and place on medium heat.
Stir to mix.
Cut each ear of corn in half.
Add corn to the pot.
Turn the heat to high, cover the pot and bring to a boil.
Remove the lid when the pot comes to a boil.
Continue to cook on high heat until most of the liquid has been absorbed.
Serve warm or at room temperature.

Cook Time: 20 minutes
Total Time: 25 minutes
Yield: Serves 6
